Laurent MICLO, research professor in nutrition at the University of Lorraine, and his team are studying the contents of our plates. Today, he focused on oysters.

He explained the different species, the sizes, the art of choosing them, and we also studied what’s inside to find out if it’s good, and we found zinc, for example, and iron too. It’s amazing what you can actually find in an oyster.
